Castilla-La Mancha is the essence of eternal Spain; a land of infinite horizons, where the wind moves the windmills of Don Quixote and medieval castles watch over from the top of the hills. Toledo, the former imperial capital, is a city that impresses from the very first moment. Its profile silhouetted against the Tagus River, with the imposing silhouette of the Cathedral and the Alcázar, leaves you speechless. To walk through its historic quarter is to travel through centuries of coexistence between Christians, Jews and Muslims; the synagogue of Santa María la Blanca, the mosque of Cristo de la Luz and the Gothic temples are testimony to this fascinating past. In every corner you can feel the mark of El Greco, whose masterpiece, The Burial of the Count of Orgaz, continues to dazzle in the church of Santo Tomé.

Following in the footsteps of Cervantes, La Mancha unfolds its endless plains, dotted with windmills that evoke the adventures of the knight of the sad face. Campo de Criptana and Consuegra preserve some of the most emblematic, with their blades turning in time with the wind. In Almagro, the Corral de Comedias theatre keeps the theatrical tradition of the Spanish Golden Age alive, offering performances in a setting that is unique in Spain.

Further south, Ciudad Real surprises with its Tablas de Daimiel National Park, a wetland ecosystem that is home to an impressive biodiversity. Not far away, the Lagunas de Ruidera, with their turquoise waters and waterfalls, offer an unexpected oasis in the middle of the plateau.

The gastronomy of Castilla-La Mancha is simple, rustic and full of flavor. The pisto manchego (a ratatouille), the cured cheese with designation of origin and the migas de pastor (a dish made from fried breadcrumbs with garlic, bacon and eggs) reflect the essence of the land. Roast lamb and pickled partridge are delicacies made following ancient recipes. And on cold days, a good plate of gachas (a porridge) or atascaburras (a hot drink made from milk, honey and cinnamon) comfort the body and soul.

The festivities in Castilla-La Mancha are pure tradition. Holy Week in Toledo is breathtaking; the Corpus Christi celebrations, with their floral carpets in the streets, are a unique spectacle. And in the villages, the pilgrimages, bull runs and fairs keep the festive spirit of the region alive.
